RECIPE of the WEEK
EGGPLANT PARMESAN Ingredient Checklist
3 eggplant, peeled (yield from 1.25 lb)s eggplant, peeled and thinly sliced
2 large eggs eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
½ cup grated Parmesan cheese, divided
½ teaspoon dried basil
Bread the eggplant using the bread crumbs, some Parmesan cheese, and the eggs. Use the dredging method.
Fry in vegetable oil
Layer sauce above and below the fried eggplant, top with mozzarella cheese, and bake in the oven at 375 until the cheese is browned.

Beaver Creek has been hard at work processing our poultry. Our turkeys are ready for sale right now and they are being sold FAST. Because of this we have been hard at work processing birds. Because of this our social media presence has dwindled, and we apologize.
We are also finding ourselves shorthanded right now. We have lost some employees, who have moved on to pursue their passions, and are looking for some additional help on the farm. If you are interested please contact us for more info.
